Microbial biomes ,ie microbes working in organized evolving teams , bring about all over in the biosphere , well-organized , efficient and precise bioconversions .We make use of some of them to grow crops ,to upgrade the plant products to feeds and foods , to digest the latter and to valorize waste streams .Plenty of ‘conventional’ production routes and products have demonstrated that this can be done in a safe way. Yet, in the European Union , the concepts of ‘novel foods ‘ and ‘precision fermentation’ offer little or no perspective to open new roads of investment for powerful microbiomes . We argue that in terms of sustainability , the misunderstanding of the safety issues in relation to microbial biomes needs to be adjusted .Outside the EU , one should certainly not hesitate to implement and accept novel potentialities of ‘mixed microbial cultures’ .
