Plant-based diets rich in vegetables, fruits, whole grains, legumes, nuts, and seeds offer numerous health benefits, including higher fiber and essential nutrient intake, and reduced saturated fat. They are vital in addressing the global syndemic of non-communicable diseases, undernutrition, and climate change. Ethnobotanic foods like hibiscus leaf, mushroom, millet, and celery are increasingly accepted across age groups due to their nutritional value.
This study analyzes mixtures of these foods (100%, 75%, 50%) and finds them rich in moisture, ash, fiber, protein, fat, and carbohydrates. Their composition supports cardiovascular health, weight and diabetes management, arthritis relief, and cancer risk reduction. These sustainable, affordable, and culturally accepted diets are safe, eco-friendly, and nutritionally adequate.
